Apple Muffin Recipe

1 cup all purpose white flour
1/4 cup corn flour
1/4 whole wheat flour
1/3 cup fruit bites
3 tbsp vegetable oil
2 eggs
1/4 cup apple sauce
1 medium size apple ( peeled, shredded)
2 tbsp raisin
1 tsp vanilla extract
1/2 tsp nutmeg
2 tsp baking powder
1/3 cup brown sugar
1 tbsp pecan (optional)

In a large bowl, mix together brown sugar, eggs and vanilla extract. Add milk, oil and apple sauce, mixed them. Then add the rest of the ingredients and stir well. Preheat oven to 350 degrees F. Grease muffin tray or muffin cups. Cups should be at least 3/4 full. Put shredded apples on top of the muffins. Then decorate with pecans. Bake for 20 to 25 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.
