Baked veggie pie

Ingredients:

1 cup all-purpose flour
1/2 cup wholewheat flour
6 tbsp soda (club soda, cold)
1/2 tsp salt
3 tbsp butter ( cold )

Filling:
1/2 cup feta cheese crumbled
1 medium potato (boiled, peeled, shredded)
1 carrot (boiled, peeled, shredded)
1/3 cup blue cheese, crumbled
1/2 cup parsley
1 tsp Italian spice
1/2 tsp paprika pepper

On top of pie:
1 tsp caraway seeds
1 egg yolk


bake for about 45 minutes

How to make it?
Mix the flour with the soda. Add salt, butter and one egg white in a large bowl. Mix all of them well. Keep adding soda and stir until a rough dough forms. Add flour if the dough is too sticky. Knead until the dough is smooth. Shape the dough on the cold marble surface into flat thin layer with a rolling pin. Make sure top layer is very thin dough.
In a medium bowl, mix carrot , parsley and potatoes. Add cheese, Italian spice, salt.
Whisk the egg yolk in a small bowl. Put one layer on the bottom of a glass pan, and fill with the ingredient. Then put a thin layer on top and rush egg on the surface and sprinkle caraway seeds.
Preheat the oven to 350F. Bake for 45 minutes or until the tops became a golden color.


serve hot
