Banana Muffin Recipe

Banana Muffin 
with jam


1 cup white flour
1/4 cup whole wheat flour
1/4 cup corn flour
1 egg
2 bananas, ripen
1 tsp baking powder
1/2 tsp nutmeg
1/4 cup milk
3 tbsp  jam ( you may use any berry kind )
2 tbsp crushed walnuts
1 tbsp coconut flakes
1 tsp vanilla extract
1 tbsp vegetable oil

How to make banana muffin ?

In a large bowl, combine the sugar, egg, vanilla extract, vegetable oil, milk and Lingonberry jam stir well with a mixer.

Add flour, bananas, baking powder and nutmeg. Sprinkle coconut flakes and crushed walnuts on top.
The dough should not be too thick.

Spray a large pan with non-stick cooking spray. Fill the muffin cups. Leave a bit room on top.
Bake 400°F for about 20-22 minutes.

Let it cool off 5 minutes. Then you can take it off muffins from the muffin pan.
