Cauliflower Balls

Vegetarian Cauliflower Balls


2 cups cauliflower (boiled)
2 eggs
1 tbsp lemon juice ( freshly squeezed )
1/3 cup cream cheese ( you can use light cream cheese)
1/2 cup shredded cheddar cheese
1 cup extra fine bread crumbs
1 tsp paprika
1/2 tsp black pepper
1 cup fresh parsley (finely chopped)
1/2 tsp Italian spice
1 tsp Cajun spice


How to make Cauliflower Balls?

Wash the cauliflower, cut it into a small pieces.
Boil in a water over medium heat about 15 minutes until it’s soft. Set aside and let it cool off.
Mash the cauliflower with a fork, add add bread crumbs, parsley flakes and spices onto the cauliflower, stir with your hands to combine. Then add cheese and make ball shapes. If you add more breadcrumbs the balls will be harder and they will keep ball shapes rather than melting to the tray. I like melting soft taste, so I keep my breadcrumbs not more than 1 cup.

In an oven tray, put the balls apart from each other. Leave room about 1/2 inch. Preheated 350°F oven, bake balls about 15 minutes.
