Cauliflower Au Gratin – Firinda Karnibahar
1 medium cauliflower, trimmed and cut into florets ( or you may use frozen package cauliflower as well)
2-3 cups boiling water ( for boiling )
1 tsp salt
1 cup milk
3 tbsp cottage cheese
1 large egg
1/2 cup baby spinach leaves
1 tsp red crushed pepper
2 tbsp wholewheat flour
1 tsp dried basil
1 + 1/2 cup grated mozzarella cheese
1 tsp black pepper
7-8 bacon strips ( optional – I used Veggie Bacon Strips)
In a pot, combine water, salt and cauliflower florets. Boil until tender about 8-10 minutes. Transfer to a colander, rinse under cold water and drain well.
Spray vegetable oil on the bottom of glass pan or an oven tray. Place baby spinach leaves evenly in an oven safe dish.
In a bowl mix milk cauliflower florets, cottage cheese, mozzarella cheese, egg and spices. Evenly distribute the mixture over the cauliflowers.
Preheat oven to 350 degrees Fahrenheit. Bake the dish about 15 minutes.
If you are going to use Veggie Bacon Strips, then after baking the dish, take the cooked Cauliflowers out.
Place Veggie Bacon Strips on top and sprinkle 1/2 cup mozzarella cheese on the dish. Turn on broil for 2 minutes.
Do not leave the dish in the over after broil if done. It can dry bacon strips too much.
