Chocolate Muffin

Chocolate Muffin Recipe

1/4 cup whey protein
1 egg
2 tbsp olive oil
1 tbsp almond meal
1 cup all-purpose flour
1/2 cup chopped dried apricot
2 packet stevia ( I used SweetLeaf® )
1/4 cup oat
1/2 cup milk
1/4 cup plain yogurt
1 tsp baking powder
1/2 tsp baking soda
1 tbsp sesame seeds
1 tsp chia seeds
2 tsp vanilla extract
1/4 tsp cinnamon
1/2 cup dark chocolate


In a bowl, mix together egg, oil, milk, and vanilla extract. Then add flours, whey protein in the mixture. Stir together. Add dried fruits and dark chocolate mixed them. Then add the rest of the ingredients and stir again. Preheat oven to 360 degrees F. Grease the muffin tray and cups should be at least 3/4 full. Bake for 18 minutes in the preheated oven or until a toothpick inserted into a muffin that comes out clean.
