Coco Protein Muffin Recipe


1/4 cup milk
1/3 cup prune juice
1/2 cup whey protein
1 large egg
1 tbsp coconut oil
1/2 cup oat flour
1/4 cup raisin
3 tbsp stevia
1/4 cup raisin
2 tbsp coco powder
1/4 cup almond butter
2 tbsp almond meal
1 tsp baking powder
1/2 tsp baking soda
1 tsp flax meal
1 tsp vanilla extract
1 tsp sesame seed ( optional )

In a large bowl, mix together egg, oil, milk, and vanilla extract. Then add flours, whey protein in the mixture. Stir together. Add raisin, mixed them. Then add the rest of the ingredients and stir again. Preheat oven to 360 degrees F. Grease the muffin tray and cups should be at least 3/4 full. Decorate the top with sesame seeds. Bake for 20 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.
