Japanese Cucumber Salad

Japanese Cucumber Salad Recipe
3 tbsp rice vinegar
1/2 tsp soy sauce
1 large American cucumber
1 tsp honey
1 or 2 tsp sesame seeds, toasted

Peel the cucumber and remove out with a spoon. Cut it into very thin slices. Let it dry or remove any excess moisture from cucumber. Using a paper towel is helpful. In a bowl combine vinegar, honey, soy sauce and sesame seeds. Add the cucumbers into the bowl. Let it cool in the refrigerator about 5-10 minutes before serving. If you are using Japanese or British cucumbers, you can leave the skin, you do not have to peel it. American cucumbers have thicker skins, that is why I peel them off.

I grow so many cucumbers in my garden this year, I am trying to find more cucumber salad recipes.
