Kidney Beans – Vegetarian Stew

Cook Time: 30 minutes
1 can Kidney beans (15.25oz / 432 gr)
1 can diced Tomatoes (choose fire roasted 14.5 oz/ 411 gr)
2 tbsp vegetable oil
1 cup fresh parsley (finely chopped)
1 tsp crushed red pepper
1 tsp paprika
1 tsp Italian spice or dried basil
1/4 tsp black pepper
1 small onion, finely chopped
1/2 cup water
In a thick bottom pan saute the onion. Add diced tomatoes and mixed them.
Then add the rest of the ingredients and stir well.
Cook in slow heat about 25-30 minutes until stew thicken.
You may serve cold or warm.
