Lemon and Cream Cheese Muffin Recipe


1/2 cup milk
1 egg
1 lemon zest
1 tbsp lemon juice ( freshly squeezed )
2 tbsp vegetable oil
1/3 cup cream cheese ( you can use light cream cheese)
1/3 cup all-purpose flour
1/4 cup sugar
1/4 corn flour
1 tsp baking powder
2 tbsp honey
2 tbsp molasses
1/2 cup dried pomegranate
1 tsp flax seeds
1/4 cup raisins



How to make this muffin?
Whisk together the vegetable oil, egg, sugar, cream cheese and milk. Add the flour, baking powder, molasses. Mix well, then add dried fruits. Decorate the muffins flax seeds and raisins on top.
Preheated 350°F oven, bake the muffins for 20 minutes. Bake until a toothpick inserted in the center of a muffin comes out clean.
