Lemon Curd Muffin

1/4 cup raisin
1/2 cup wholewheat flour
1/4 cup corn flour
1/2 cup white flour
1/2 cup powdered sugar
1/2 cup lemon curd jam
1 large orange zest and juice ( freshly grated )
1 medium egg
2 tbsp vegetable oil
1/4 cup yogurt
1/4 tsp sesame seeds
1 tsp baking powder
1 tbsp coconut flakes

How to make Lemon Curd Muffin?

In a large bowl, combine the sugar, egg, yogurt, orange juice, vegetable oil, lemon curd jam and baking powder, stir well with a mixer. Add flour mix again. Add the orange zest and raisin, stir well. Sprinkle sesame seeds and coconut flakes on top.
The dough should not be too thick.

Spray a large pan with non-stick cooking spray. Fill the muffin cups. Leave a bit room on top.
Bake 375°F for about 20 minutes.
