Light Peanut Butter Muffin

Peanut Butter Muffin Recipe


1 cup all-purpose flour
1/4 cup corn flour
1/4 cup milk
1 tbsp vegetable oil
2 tbsp molasses
1 tsp vanillin extract
1/2 cup raisin
1/2 cup pecan
1/4 cup sugar
1 tsp baking powder
1 egg
4 tbsp apple sauce
1/8 teaspoon ground cinnamon
2 tbsp jam ( raspberry or other kinds )

In a bowl, beat the egg with milk and sugar.
Add molasses, peanut butter, jam, vanillin extract, apple sauce and oil mix well.
Then add flours and raisins.
Preheat oven to 360 degrees F. Grease muffin cups or line with muffin liners. Fill the mixture into muffin cups.
Leave a room a bit on top.
Put pecans for the decaroration. Bake for about 20 min.
This is a light muffin, does not have too much sugar or oil in it.
