1 package liver (0.74 lb=335gr)
2 cups diced tomatoes
1 large bell pepper, sliced
1 large carrot, sliced
1/4 cup diced onions
2 tbsp olive oil
1/2 tsp paprika
1 tsp dried basil
1/4 tsp black pepper
1/4 tsp cumin
How to make this dish?
Wash liver thoroughly and cut into bite sizes.
Cook liver in a deep pot about 10 -12 minutes.
In a frying pan, fry onions with pepper in slow heat. Remove the liver from boiled water with a strainer. Add half way cooked liver in it. Stir well, add spices, cook about 3-5 minutes. Add diced tomatoes cook in slow heat about 5-8 minutes wit the lid on the frying pan.
Serve with a pita bread, or rice. Mash potatoes also goes well wit liver.
