Mustard Leaves Stew, An Aegean Style Vegetarian Recipe
Servings: (2-4 servings)
2 cups mustard leaves, finely chopped
1/2 cup lentil
1/4 fresh basil leaves, finely chopped
1 /4 cup mushroom, chopped
1 cup sweet green chili pepper, finely chopped (or 1 bell pepper)
1 cup fresh parsley, finely chopped
1 tbsp olive oil
1 cup crushed tomatoes
t tbsp fresh dill, finely chopped
1/4 cup Orzo noodle
3 cups water
1/2 cup vegetable broth
1 tsp sumac
1/4 tsp oregano
1 tsp paprika
1 tsp salt
You can use a food processor to chop all the greens (mustard leaves, parsley, dill, basil).
After chopping all the greens in a saucepan, put olive oil, add Orzo noodles. Stir a few times over medium heat.
Add crushes tomatoes. Then add the greens, spices, vegetable broth and water.
Let it cook about 30 minutes in slow heat. Do not cover the lid.
