No Sugar Coconut Protein Muffin Recipe


1+1/4 cup milk
1/4 cup soy flour
1/4 cup whole-wheat flour
1/4 cup whey protein
1/4 cup sunflower seeds
2 tbsp shredded coconut
1 tbsp coconut flour
2 egg
3 tbsp coconut oil
1/2 cup oat
3 tbsp stevia
1/4 cup papaya ( diced )
2 tbsp coco powder ( no sugar added )
1 tbsp peanut butter powder
1+ 1/2 tsp baking powder
2 tsp flax meal
1 tsp nigella seed
1 tsp vanilla extract

In a large bowl, mix together egg, oil, milk, stevia and vanilla extract. Then add flours, whey protein, coco powder, baking powder in the mixture. Stir together. Add papaya, mixed them. Then add the rest of the ingredients and stir again. Preheat oven to 360 degrees F. Grease the muffin tray and cups should be at least 3/4 full. Bake for 20 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.
