Nutritious Salad Recipe
1/4 cup rice vinegar
1/4 tsp rock salt
1 long British cucumber ( you may use two small American cucumber as well )
1 tbsp almonds, chopped finely
2 tsp sesame seeds, toasted
1/4 cup parsley, chopped
1/3 cup arugula, chopped
5-6 leaves of lettuce, chopped
1 roasted red pepper
2 tbsp fresh basil leaves, chopped
1 tbsp mint leaves, chopped

In a frying pan toast the sesame seeds. Add almonds on top and put rock salt. Stir a few times, remove from the stove. Peel the cucumber and cut it into very thin slices. In a bowl combine vinegar, cucumber and greens. Add sesame seeds and almonds. If you are using American cucumbers which have thicker skins, you need to peel them off and remove the seeds as well.Bristish cucumbers usually have soft, tiny seeds, so it can stay.
