Mediterranean Style Olive Bread Recipe ( 2LB = 908gr, almost 1kg Loaf )
(Oster Breadmaker Model 5838)
2 cups white flour
2 cups whole wheat flour
1 + 1/3 cup water (110 degrees F/45 degrees C)
1/2 cup chopped black olives
1/4 cup sunflower seeds
1 tsp sesame seeds
1/2 tsp chia seeds (optional)
1 tbsp sugar
1 tbs wheat germ
1 tbs Malt-O-Meal
1 tbsp olive oil
2 tsp dry milk
2 tsp active dry yeast
1 tsp salt
2 tsp gluten
1 tsp rock salt
1/2 tsp Italian herb
1/4 tsp basil
Use room temperature of water for all ingredients. Pour the luke warm water into the bread pan.
Add olive oil, herbs, salt, sugar and dry milk and mix well.
Then add the flour. On top of the flour pile make a small room for the yeast. Its like a tiny well, so you can pour the yeast in it.
Make sure that yeast does not touch the liquid.
The most important detail when machine is kneading the dough, the machine should be in warm environment.
If your kitchen is cold like 15 C degree=58F, your dough will not rise.
Desired dough temperature is 78ºF or 25.6ºC.
Try to keep the room warm like 26 Celsius = about 78 degrees Fahrenheit.
My kitchen is usually about 20C=68F, so I put a small heater in front of my bread machine to keep it warm during kneading cycle.
Bake about 3 hour 40 minutes. You can choose light or dark crust setting.
