Olives, Herbs Muffin

Cook Time: 25 minutes

2/3 cup milk
1/2 cup chopped black olives
1/3 cup Ricotta cheese
1 cup flour
1/4 cup oats
1 tbsp currants
1/4 cup dried cherry
1 tsp dried basil
1 large egg
1 tsp olive oil
1/4 teaspoon sea salt
1/2 teaspoon rock salt
1 tsp Italian herb
1 + 1/4 tsp baking powder
1/4 tsp baking soda
1 tsp chia seeds
1/2 tsp flex seeds

How to make this muffin?
In a large pan put olive oil, egg, baking powder, baking soda mix well. Add cheese and the rest of ingredients. Spray a muffin pan with non-stick cooking spray.
Fill the muffin cups to almost full. Bake 360°F (180°C) for about 20-25 minutes.
Cool the muffins in a pan for about 5 minutes to allow for easier removing.
