Pastry with potatoes and spinach

Homemade pastry with potatoes and spinach (in Turkish puaça)


2 cups all-purpose flour
1 cup wholewheat flour
1 cup soda (club soda in room temperature)
1 tsp salt
2 tsp baking powder
3 tbsp olive oil
1 egg

1 large potato (boiled, peeled, shredded)
1 cup spinach, chopped
1/3 cup Parmesan cheese, shredded
1 tsp Italian spice
1 tsp black pepper

On top of Puaça:
1 tbsp sesame seeds
1 egg

How to make Puaça?
Mix the flour with 1/3 cup soda. Add salt, baking powder, olive oil and one egg in a large bowl. Mix all of them well. Keep adding soda and stir until a rough dough forms. Add flour if the dough is too sticky. Knead until the dough is smooth. Shape the dough into a large ball, cover it ( put a clean towel on top) and let the dough rest when you are preparing filling.
In a medium bowl, mix chopped spinach with potatoes. Add Parmesan cheese, Italian spice, salt and pepper.
Take a small sized ball from the dough make round shapes. Then spoon the spinach filling onto the center of each pastry round. You may make a half moon shape pasty as a result. Whisk the egg in a small bowl. Brush egg and sprinkle sesame seeds on top.
Preheat the oven to 350F. Bake for 10 minutes, then turn the heat to down 325F then bake 10 more minutes until the tops became a golden color.

About the filling:
You can make this pastry with many greens. Instead of spinach you may use chopped mustard greens as well, you can substitute frozen, thawed well.
