Potato and Spinach Borek with Club Soda Recipe
Patatesli Ispanaklı Börek Recipe (Borek with potatoes and spinach)
Servings: (4-6 servings)
1 Package Filo Dough #10 ( bigger number is better )
2 packages frozen spinach ( you can use fresh chopped spinach too, unfroze the spinach before using it )
2 large size potatoes
1/2 cup feta cheese
Using between filo dough sheets:
2/3 club soda
2 tbsp olive oil
1 tbsp sesame seeds ( sprinkle on top of the last layer )
1 egg ( for the top layer )
Preheat oven to 350 F. Grease a very large pan that fits the filo dough. First boiled the potatoes and shred them. In a separate bowl mix olive oil , milk and soda water together.
In a bowl, mix together shredded potatoes, spinach and cheese until well blended. Then put a few flakes of filo dough into pan. With a spoon pour milky soda water a little and put some spinach mixture. Then add a few more layers add ingredients again. When you finish all ingredients, put last a few flakes and pour egg on it. After evenly cover the egg all the top layer sprinkle some sesame seeds.
Cook the borek about 20 minutes in the oven.
