Potato Balls  – Vegetarian Appetizer

Prep Time: 45 minutes
Cook Time: 15 minutes

3 medium size potatoes ( boiled, shredded)
2 eggs
1/2 tsp black pepper
Feta cheese about 4 oz
1/2 cup shredded sharp cheddar cheese
1 cup fresh parsley (finely chopped)
1 tsp crushed red pepper
1/2 tsp black pepper
1/2 cup bread crumbs ( finely grained)

In a bowl shred the boiled potatoes.  Add eggs and parsley and mixed them.
Then add all the spices and stir well. Take a piece of the mixture into your palm, make a ball shape, dip into bread crumbs.
Grease a large tray and put them apart each other about 1/2 inch.
Bake them about 15 minutes. You may serve warm or cold.
