Protein Muffin Recipe

Ingredients

1/2 cup milk
1/2 cup soft cheese
1/2 cup whey protein
1 egg
2 tbsp olive oil
3/4 cup all-purpose flour
1/4 oat flour
1/4 oats
1/2 cup raisin
4 packet stevia ( I used SweetLeaf® )
1/4 cup oat
1 banana
2 slice dried pineapple
1tsp baking powder
1/2 tsp baking soda
1 tbsp sesame seeds
1 tsp flax seeds
1 tsp vanilla extract
2 tbsp white chocolate (optional)

In a large bowl, mix together egg, oil, milk, and vanilla extract. Then add flours, whey protein in the mixture. Stir together. Add dried fruits, mixed them. Then add the rest of the ingredients and stir again. Preheat oven to 380 degrees F. Grease the muffin tray and cups should be at least 3/4 full. Decorate the top with sesame seeds and white chocolate. Bake for 20 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.

Stevia:
1 Tablespoon Sugar = 1/4 Teaspoon Stevia
1 Cup Sugar = 4 Tablespoons Stevia

1 tablespoon…………8-12 drops
1/4 cup……………..1/8 tsp

Protein: 1 gram = 4 calories
Carbohydrates: 1 gram = 4 calories
