Salty Yam Muffin Recipe

Cook Time: 25 minutes
1/4 cup oat
1/4 vegetable oil
1,5 cups wholewheat flour
1 cup hummus
1 large yam ( boiled, peeled, smashed )
1 large lime zest ( freshly grated, about 1tsp )
1 large egg
1 cup yogurt
1 tsp rock salt ( lemon salt )
1 tsp sesame seeds (Black Sesame Seeds)
1 tsp baking powder
How to make yam muffin ?
In a large bowl, combine egg, salt, vegetable oil, hummus, yam and baking powder, stir well with a mixer. Add flour, yogurt and oats and lime zest. Sprinkle sesame seeds on top.
The dough should not be too thick.
Spray a large pan with non-stick cooking spray. Fill the muffin cups. Leave a bit room on top.
Bake 350°F for about 25 minutes.
Let it cool off 10 minutes. Then you can take it off muffins from the muffin pan.
