Seedy Muffin Recipe


1 cup apricot juice
1 egg
2 tbsp olive oil
1 + 1/4 cup all-purpose flour
1/3 cup powdered sugar
1/4 cup corn meal
1 + 1/4 tsp baking powder
1 tbsp oat
1/2 cup raisin
2 tsp chia seeds
2 tsp flax seeds
1/3 cup dried cranberries
2 tbsp dark chocolate toppers (optional)
2-3 dried apricot

In a deep bowl, mix together egg, oil, sugar and juice. Then add flour, baking powder. Add dried fruits and seeds, mixed them well. Preheat oven to 350 degrees F. Grease muffin tray. Cups should be at least 3/4 full. Bake for 22 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.
