Spinach Soup

Spinach Soup Recipe

2 tbsp Coconut oil
1/4 cup dices onion
1 can coconut milk ( 13.5 oz/ 400ml )
1 package frozen spinach ( 10 oz )
1/3 cup shredded potatoes
1/4 cup parsley, chopped
1/8 tsp ginger powder
1/4 tsp cumin
1/2 tsp turmeric
1/2 tsp salt
2 tbsp balsamic vinegar
2 cups water


In a bowl fry the onion with spices. Add spinach, shredded potatoes and milk, cook in a slow heat. When it is cooked, use a blender to for a smooth and creamy texture.
