Spinach & Split Pea Soup
In Turkish: Arpa Şehriyeli Ispanaklı Çorba

2 green onions, chopped
1/2 tsp black pepper
1/2 tsp paprika
1 tbsp vegetable oil
1 tsp dried dill
1 tsp dried mint
1/4 cup Orzo noodles
1/2 bunch spinach, washed and chopped
5 cups water
1/2 cup dried yellow split peas, picked over and rinsed
Salt to taste

Directions:
In a heavy-bottomed deep saucepan sauté the onions for about 2-3 minutes.
Add Orzo noodles and spices. Stir well. Then add spinach and spilt peas.
Add water and cook to medium-low heat about 45 minutes.
Cover the pot and simmer until the split peas are tender and beginning to break down.
Stir every 5 minutes or so to make sure that the split peas don’t stick to the bottom of the pan and you may add water if necessary.
