Stuffed Anaheim Peppers Recipe
1/4 cup water
2 small tomatoes, sliced
4 large Anaheim peppers
1 cup baby shrimps (cooked)
1/2 cup Tikka Masala Curry Sauce
1/4 cup chopped parsley
1/3 cup fresh grated Parmesan cheese
In a bowl mix Tikka Masala Curry Sauce with baby shrimps.
Preheat oven to 350F. Spray a casserole dish or a glass pan with cooking spray and place 1/4 cup of water on the bottom among with large tomato slices. Using a sharp knife to split pepper down the length of one side. Do not cut all the way through. And remove the seeds from the Anaheims. Discard seeds and fill with shrimp. On top put Parmesan cheese and decorate with parsley. Cook about 10-12 minutes.
