Tangerine Muffin

Light Tangerine Muffin Recipe


1/4 cup milk
1 egg
2 tbsp vegetable oil
1 + 1/2 cup all-purpose flour
1/2 cup raisin
1/2 cup brown sugar
1/4 cup jam (I used merlot)
1 tangerine (freshly squeezed juice, also use the zest)
1/2 cup dried cranberries
1 + 1/2 tsp baking powder
1 tsp molasses
1 tbsp sesame seeds
2 tsp flax seeds
1 tsp vanilla extract

In a large bowl, mix together egg, oil, milk, molasses, juice, jam and vanilla extract. Add dried fruits, mixed them. Then add the rest of the ingredients and stir again. Preheat oven to 350 degrees F. Grease the muffin tray and cups should be at least 3/4 full. Decorate the top with sesame seeds. Bake for 20 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.
