Veggie & Dried Fruit Muffin

1/4 cup yogurt
1 cup flour
1/4 cup vegetable protein
2 medium size shredded carrot
1 medium size shredded zucchini
1 large egg
3 tbsp coconut oil
1 tsp flax meal
3 tbsp stevia
1/2 cup papaya ( diced )
1/2 cup raisin
1+ 1/2 tsp baking powder
2 tsp flax meal

In a large bowl, mix together egg, oil, yogurt, and stevia. Then add flour, protein, baking powder and veggies in the mixture. Stir together. Add papaya, mixed them. Then add the rest of spices and stir again. Preheat oven to 375 degrees F. Grease the muffin tray and cups should be at least 3/4 full. Bake for 35 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.
