Vermicelli & Rice Pudding

Turkish Aegean Style

  • 1/4 cup Vermicelli Noodles
  • 1/4 cup uncooked short grain white rice
  • 4 tbsp raisins
  • 1 tbsp crushed almonds or walnuts
  • 1/2 tsp cinnamon
  • 1 tsp of vanilla extract
  • 1 can condensed milk = 12oz/354 ml
  • 1/2 cup water
  • 1 egg
  • 1/4 cup sugar
  • 1 tbsp vegetable oil

How to make the pudding?
In a heavy-bottomed saucepan, fry the Vermicelli until light brown and add 1/4 tsp cinnamon.
Add rice in it with 1/2 cup of water. Boil them for 10 to 15 minutes or until rice is soften.
In a small bowl, whisk the egg.
Add sugar, milk, egg, raisin and vanilla extract into boiling bowl and stir freuquintly.
Cook about 15 more minutes.
When the pudding is thick, turn off the stove.
Pour into small cups to serve, sprinkle 1/4 tsp cinnamon and garnish with almonds on top.
