Yam Muffin Recipe

Prep Time: 15 minutes
Cook Time: 20 minutes

1 cup yam ( a small yam, boiled, peeled, smashed )
2 tbsp vegetable oil
1/2 cup white flour
1/2 cup cup wholewheat flour
1/4 cup sugar
1/4 cup raisin
2 tbsp molasses
1 large egg
1/4 cup milk
1 tsp nutmeg
1 tsp vanilla extract
1/4 cup almonds (optional)
2 tsp baking powder

How to make yam muffin ?

In a large bowl, combine egg, milk, vegetable oil, sugar and whisk together. Then add yam, raisins and baking powder, stir well with a mixer. Add flour and molasses gradually. Sprinkle nutmeg into mixture.
The dough should not be too thick.

Spray a large pan with non-stick cooking spray. Fill the muffin cups. Leave a bit room on top.
Bake 375°F for about 20 minutes.

Let it cool off 2-3 minutes. Then you can take it off muffins from the muffin pan.
