Yellow Squash Soup Recipe

Cook Time: 30 minutes

1 Yellow Squash (finely chopped)
1 medium white onion (finely chopped)
1 cup diced tomatoes
1/4 cup Mung bean
1/4 cup pink lentil
5 cups water
1/2 tsp red crushed pepper
1 tbsp vinegar
2 tablespoons olive oil
1 tsp dried basil
1/2 tsp salt and black pepper to taste

Yellow Squash Soup

How to make the soup?

In a deep sauce pan, pour olive oil and onions saute about 2 minutes in low heat. Then add rest of the ingredients and let them cook about 25-30 minutes in slow heat. Before serving add salt and black pepper into the soup.
